CLOTHING THAT COMPLIES WITH THE HACCP PRINCIPLES ARE SPLIT INTO THREE RISK CLASSES: Low hygiene risk: Risk class 1 Clothing in risk class 1 have a relatively low protective function. The clothing is used for work in environments where there is a minimal risk of coming into contact with foodstuffs, as they are sufficiently protected by their packaging. High hygiene risk: Risk class 2 Clothing in risk class 2 have a high protective function. The clothing is used when handling perishable food which does not require further processing, as well as food that is not wrapped in packaging.

Highest hygiene risk: Risk class 3 Clothing in risk class 3 have a very high protective function. The hygiene risk is at the highest level when handling items like unpackaged, ready-to-eat and perishable foods.
